Overview

Bouillon Republique, nestled in the bustling heart of Paris’s 3rd arrondissement at 39 Boulevard du Temple, stands as an emblem of affordable French dining without sacrificing authenticity or charm. This restaurant captures the spirit of traditional Parisian bouillons—simple, hearty, and welcoming—making it an inviting destination for both locals and visitors seeking genuine, home-style French cuisine.

The menu reads like a homage to classic French flavors: escargots rich in garlic and herbs, tender ham hock with caramelized edges, delicate filet de dorade paired with beurre blanc, and the ever-comforting ravioles du Dauphiné. Desserts such as floating island with pink pralines and profiteroles offer a sweet closure to the meal, echoing a nostalgic yet refined touch.

One of Bouillon Republique’s greatest strengths is its ability to balance quality and value. While it does not chase Michelin-star extravagance, the food delivers straightforward, satisfying flavors reminiscent of homemade dishes, as noted by many guests. The escargots, in particular, seem to delight those who try them repeatedly. The kitchen clearly respects tradition, preparing dishes with care and a focus on honest ingredients.

The atmosphere inside is lively—often buzzing with tourists and locals alike. The interior embraces a cozy, bustling vibe where the warmth of the service team shines through, although the pace can feel brisk. Seating is tight, reflecting the eatery’s popularity and efficient use of space, which may not suit those looking for a quiet, leisurely experience but perfectly suits small groups or friends looking to share plates and stories. Reservations are advised, especially during peak hours, to avoid waits in this always-packed spot.

Bouillon Republique caters to those who want a genuine Parisian dining experience—accessible, flavorful, and rooted in tradition. It draws a varied crowd: tourists eager to sample local staples, neighbors enjoying affordable classics, and wine lovers appreciating the range of options available by the glass or bottle. It’s a true neighborhood gem where food and conviviality take center stage without pretense.

While not without its drawbacks—such as occasional crowd noise and a fast turnaround ethos from staff—the restaurant remains a compelling choice for those prioritizing value, authentic cuisine, and a slice of Parisian life. Whether stopping in for a glass of vinho or making a full evening of it with several plates, Bouillon Republique offers a sincere taste of France’s culinary heart.

Extremely bang for your buck. We had initially stopped for dessert only but were charmed by the cosy interior. And shocked by the menu prices. Honestly for the food quality it doesn’t get any better than this. Sure, it’s no Michelin star taste, but we were pleasantly surprised by the escargots - and ended up ordering 2 more plates! Would highly recommend this place, even if just for drinks and some light bites.

Definitely a spot for at least one visit for Paris! Packed with tourists or a group of visitors with their local friend. Food was great! Portion was good for sharing and they have many sizes of wine you can choose from. Noise level is pretty loud and the staffs seem to want you to leave soon after you finish your meal. They don’t mind bumping around your chairs to get around so that was a little irritating. Super packed. Either make a reservation or go way earlier than the usual meal time. Price was great - very affordable.

Bouillon République is a wonderful place to enjoy tasty and healthy food, cooked just like at grandma’s home. The atmosphere is warm and pleasant, with a smiling and attentive service. The team is extremely well organized and truly friendly with the guests. On top of that, the prices are very affordable. A great spot to enjoy authentic food in Paris.

the place was amazing! I could say that it could be the most affordable restaurant in Paris, we paid around 35 euros for everything. definitely recommend doing a reservation, that's why we did not wait at all. our reservation was for 10pm and we walked in straight away to our table when we arrived! I really appreciate the service there; the guy helped us with everything and the mousse was really good, for one person it is too much!!! all the dishes were great and tasty, especially haxe!!! definitely worth to try!

The price of each dish is indeed lower than most French restaurants in town. Other than that, there is nothing else. The food is very ordinary in taste and presentations. I would say no presentations when comparing to other French foods. The duck meat is overcooked, dry, a little too salty with strong ducky smell (aka fishy smell). The tuna is also overcooked and dry. If you want a real quality French food while in town, I recommend you to go to a different place. The tables are so cramped that you need to move it to get out if you sit in the middle seats. We were there early at 5:00 pm and sat in one of those middle tables in the first floor. The whole floor almost full at that time. The air conditioner wasn't on in the first floor; there was no air circulation except when other guests enter the restaurant via the entrance door. However, there was no one at all on the 2nd floor dinning area at that time but the air conditioner was fully on. I knew this because the washroom is on the 2nd floor. This place is popular is mainly due to erroneous reviews and hype. The restaurant can get very busy after 6 pm. If you insist to come for its lower price meals, come very early or make a reservation in advance first. From my restaurant bill, it looks like a crazily high 30% TVA (so-called French tax) already added to the food. Moreover, the servers still demand 5, 10, or 15% tipping when you pay the bill. I thought a 30% TVA would have included the gratuity.

I love this place! The perfect restaurant to discover French gastronomy in a beautiful setting at a very affordable price! Everything was good and rather hearty. Reservations are possible but must be made well in advance. Otherwise you'll probably have to queue for a few minutes, but it's still reasonable. I highly recommend it.

It a common and frequently visited restaurant with French plates with a good price. The attention of the staff es awesome except for the one at the entry (curly long hair) who was not polite and with a bad attitude. Other than that we had good experience and plates were good, big and affordable. It’s a must if you want French food during your visit in Paris.

The food was really tasty! Super cheap and delicious place to eat. Especially if you are on vacation. We payed around 100€ with two person and 2 kids. We have started, main meal and dessert, all of us and also drinks of course .We were there around 17:00 o’clock was a perfect time. We had place direct. We saw later in the evening is really a lot of people what is understandable for this price and quality. Highly recommend! When we go back to Paris we will definitely go back to this place!
